Grilled Sea Bass or Gilt head Bream Fillets with Healthy chips and green salad

Cooking and preparation time 30 – 40 mins.

Healthy chips:

First, most of the vitamins and nutrients in a potato are found in the skin so wash your potatoes, please don’t peel them. I particularly like Maris piper or King Edward potatoes as they’re great all rounders and easily bought. You may well have your own favourites so please use them instead.

Cut you potatoes evenly into chips or cubes to ensure they cook evenly. Place in a baking tray drizzle a little rapeseed oil over them, a sprinkle of sea salt flakes and freshly ground black pepper and some dried herbs of your choice, rosemary and thyme work really well, then roll your sleeves up and massage the oil, dried herbs and seasoning into all of the potatoes.

When you’ve washed your hands place the baking tray in the middle of the oven at 180 degrees or gas mark 4, and bake for about 25 mins turning them over once or twice during cooking.

Green salad:

Get creative with whatever is seasonal here, I particularly love peppery watercress, rocket leaves and chives. You may like it simpler, A sweet baby gem lettuce dressed with lemon juice and olive oil or a garlic mayonnaise is a great accompaniment also. Or go to town and create something to be proud of but treat your ingredients with love and you’ll get love out, that’s the key.

Right the fish:

Put your fresh fillets onto a grill pan and gently massage some rapeseed oil and seasoning into the fillets. Lay the fillets skin side up on the grill pan and place under a medium grill about 5 inches or 12 cm below the heat to ensure they cook evenly. Keep an eye on them as they’ll not take long, about 5 or 6 minutes. When the skin is blistering and charred and looking and smelling incredible by the way, take them out and turn them over, put them back under the grill for about a minute then take them out and turn off the grill. Using a fish slice. Gently lay the fillets skin side up on some kitchen paper to rest for a minute.

Serve your Sea Bass or Sea Bream fillets skin side up for that crispy skin to be at its best and portion your healthy chips and salad to suit.

My suggestion would be to serve with an easy olive oil and lemon juice dressing and some garlic mayonnaise. Sprinkle some sea salt flakes and freshly ground black pepper.
